Gluten-Free Chocolate Oat Banana Bread

Alright I know this sounds crazy but…this bread has no refined sugars, no processed flours, and is made with amazingly healthy ingredients. It is so delicious, has a great texture, and will satisfy that sweet tooth while fueling your body with some incredible nutrients!

Try it out and let me know what you think! This was my first attempt (and while I was creating it I was writing the recipe down on a napkin) but I will say my family ate it all already so I think it was a crowd-pleaser. Now on to the recipe:Bread4

 

Ingredients:

  • 3 medium bananas (ripe)
  • 1 1/2 cups purΓ©ed carrot (I used a food processor)
  • 2 medium eggs
  • 1/2 cup honey or maple syrup
  • 2 Tbs coconut oil
  • 3 cups gluten-free oats (used food processor or blender to blend into flour)
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 1 pinch salt
  • 1 tsp cinnamon or pumpkin pie spice mix (cinnamon, clove, nutmeg mix)
  • 1/2 cup of chocolate chips (or if you’re me…even more)
  • 1/2 cup other mix ins like nuts or dried fruit

Directions:

Preheat your oven to 350ΒΊF.Β Β Use some coconut oil to grease your 9Γ—5-inch bread pan. You can also line the pan with parchment paper (I did on the bottom of the pan) or use nonstick cooking spray.

In a large bowl combine the, mashed bananas, purΓ©ed carrot, eggs, honey, coconut oil, and vanilla.

In another bowl, combine the oat flour, baking powder, baking soda, salt, and cinnamon.Β Β Add the dry ingredient to the wet ingredients all at once and stir until combined.

This is when I mix in the best things like the chocolate chips and instead of nuts (which I am allergic to) I added pumpkin seeds, sunflower seeds, and golden raisins (which made it like a chocolate raisin bread yummy).

Pour the batter into the prepared bread pan. I also added chocolate chips and seeds on the top of the batter. Transfer to the oven and bake for around 55 minutes or until a toothpick is inserted into the middle and comes out clean.

Let the loaf cool for 15 minutes before removing from the pan. Allow to cool completely before cutting and enjoy your healthy treat!
